Of course you can! The Quran or the Prophet Muhammad peace be upon him hardly speak of the way words are spelled in English, therefore it is completely up to a person’s own preference how they spell a name in English.

Yes, according to the 13th and 14th century scholars Zayn al-Dīn al-Razī and Ibn Manẓūr, Sayyaf is someone who has or carries a sword, which in English would be called a swordsman. (Zayn al-Dīn al-Razī, Mukhtār al-Ṣiḥāḥ , entry for: سيف. Ibn Manẓūr, Lisān al-ʿArab , entry for: سيف.)
